First Preseli Mountain Harvest

IMG_2996On Saturday we managed to take about 85 lbs of honey from three of the four hives I have up in the Preselis. I was ably assisted by Jamie and Suzi Owen who own the restored crofter’s farm where the hives are sited. We are calling this crop Wild Mountain Flower honey as the aim was to harvest before the Ling Heather comes into flower. This way, what is brought in from now on should be virtually all Heather Honey. This is an experiment and may prove to be a damp squib, but hey-ho, nothing ventured …..
The first crop – of wild flower honey – is now settling out and will be jarred in a couple of days. I will post a pic to show the difference – if any – between our Preseli honey and the usual here on the Cleddau Estuary. It does taste fantastic and seems a lighter honey with a sharp citrus taste. Should be lots of Blackberry and Rosebay Willowherb with a bit of mountain Rhododendron thrown in.
